Cirelli Organic Bianco (white)
100% Trebbiano, Abruzzo, Italy
This is a beautiful, bright & delicious Natural wine from a fantastic producer Francesco Cirelli. Recommended with briny seafood, olives, cured meats, vegetable dishes.
Terra D’Alter Reserva No So2 (red)
Aragonez (Tempranillo), Alentejano Portugal
This is a fantastic red from central Portugal. Pairs great with red meat, charcuterie boards, mushrooms & roasted vegetables.
Ledogar Roug’e Clair (rose)
Grenache, Carignan, Languedoc-Roussillon, France
This is such a treat to have. Only 85 cases are produced a year. This is from a hugely respected Vineyard and by a winemaker who is fully bought in to using the most sustainable farming methods. This wine is way above even Organic. It is vegan, biodynamic and certified sustainable.
It is rare, no just in the few bottles produced but the style of the wine as well. It is darker and has more skin-contact than a rose, but isn’t at all a red wine! It is a great patio sipper! Best enjoyed at around 15C. If you’re stuck in winter and cannot be on a patio, instead have it with some lighter cheeses: goats cheese with a berry compote – or a triple cream brie and you’ll be transported to a better place – for a while at least.

Been in the restaurant industry for 20 years. He has done everything from being a bus boy, to an area manager. He was lucky enough to be mentored by various people in the industry that have helped taught him lots about food, wine & cocktails. Including his own personal learning. Kristofer Sutton was lucky enough to be part of a fantastic team at North 53, that really helped form the cocktail scene in Edmonton, and have been responsible for creating and maintaining a few drink lists in town.
Currently Kristofer is working in an area-manager/beverage director role for the Sabor & Bodega restaurant + wine bar group. He excited to come to work every day and help customers have fantastic experiences trying a multitude of great wines from around the world
